Hello, I have been playing with making almond milk. I have a client who says your almond milk is exquisite. Is there any possibility you could tell me how you make it? I have tried several recipes so far and don’t think they are exquisite. I’m in Boulder, CO so can’t come to your restaurant, alas! Yours truly, Ty Miller

Hi, there! It’s four cups of filtered water to one cup of organic soaked almonds (soaked in water overnight). Blend until almonds are at a pulp, then strain through either cheesecloth or a nutmilk bag. We use nutmilk bags here (they are far cleaner and easier). It’ll keep for about three days, but tastes much better fresh.
