He continues with the egg theme and prepares his mother’s unique dish of Eggs Jeannette, A savory and very tasty Flan With Green Herbs [3] follows, so simple to make when fresh herbs are plentiful. Jacques finishes with a delicious Spinach, Ham And Parmesan Soufflè [4], unusually presented in a rectangular glass dish.
