Episode 118: Egg-ceptional

Jacques Pepin cooking in Episode 118 of Essential PepinSoft and creamy Mollet Eggs Florentine make a perfect and easy breakfast or lunch that Jacques shares with his best friend Jean-Claude in the program’s open. He continues with an egg theme featuring Eggs In Ramekins, Eggs En Cocotte and Scrambled Eggs In Bread Cases With Candied Oyster Mushrooms. Finally, he demonstrates how to make various omelets: a classic Fines Herbs Omelet, an American Mushroom Omelet and a Flat Potato Omelet.

    So simple yet so good. I can’t wait to try the flat potato omelet (my Italian friends would call it a frittata) with some of the surplus potatoes I still have in my garden. Thank you Jacques, keep the good things coming!

    Made the Mollet Eggs Florentine and OMG it was SALTY.  I reviewed the recipe, after I’d made it, to see if I made an error, then realized that the total recipe had 2 1/2 tsp. salt PLUS 4 1/2 TBS. of cheese – which added to the saltiness.  I was very disappointed.

    nothing at all to comment about he’s a genius in everything he does and touches esp when he say’s ready na. Jacques got class in himself his career and most of all his family which is always his inspiration

    It’s like learning to cook with your grandfather who happens to be a world famous chef.
    Every time I watch one of his shows I’m always moved to say the same thing at the end:
    “I love him!”.
